Super easy, tasty chicken

It's no secret -- the Buds love chicken. They recently stumbled across a recipe for balsamic chicken. Bud Shaunna had been making it for a while and then shared the recipe with Bud Em. Guess what? Bud Em loved it too!
The recipe is adapted from the cookbook "Make it Paleo" by Bill Staley and Hayley Mason, who are both Pittsburgh natives. The cookbook is full of paleo diet friendly dishes, but even if you don't eat paleo, the recipes in the cookbook are also grain-free. Pictures are included of every recipe.
Next time you're looking for a simple and delicious chicken recipe, try this balsamic chicken recipe, courtesy of the book "Make it Paleo" by Bill Staley and Hayley Mason:
1 lb boneless, skinless chicken breast
Olive oil, to taste
Garlic, 1-2 cloves minced
Salt and pepper, to taste
Rosemary, to taste
Balsamic vinegar, approx. 1/4 cup
Preheat the oven to 425. Coat the chicken with some olive oil and place in a glass baking dish. Season with salt and pepper. Mince 1 to 2 cloves of garlic (one is usually enough unless you like lots of garlic) and divide and spread that on top of the chicken breasts. Sprinkle chicken with dry rosemary to taste (hint - don't coat it in rosemary, but you definitely want enough to get the rosemary flavor; trust us, it's a great combination with the balsamic vinegar).
Bake for 20-25 minutes, checking for doneness (we use a little meat thermometer to let us know when the chicken is fully cooked).
Remove the chicken from the oven and pour balsamic vinegar over top while it's still in the baking dish. The recipe calls for 1/4 cup, but you can just eyeball it and pour it straight from the bottle if you trust yourself.
That's it! The olive oil keeps the chicken moist while baking, and the balsamic vinegar provides a surprising, and tasty, zing. Serve with a side of greens like broccoli, sauteed spinach or kale or a salad, and you've got yourself a very easy dinner. And during this busy time of year, who doesn't want something fast?
