Happy International Waffle Day!

March 25 is International Waffle Day. Who doesn't love a good waffle? And we're not just talking food.

You can also waffle about a decision. Hmm.... do I want to wear black pants or blue pants today? Should I make chicken or beef for dinner? Chocolate or vanilla? Oh, well, see, I guess everything does come back to food, but you catch our drift!

But the real star of the day is the confectionary creation we lovingly call the waffle. International Waffle Day originated in Sweden. It celebrates the feast of the Annunciation as well as the beginning of spring. Swedish families would customarily celebrate these events by making waffles. Those Sweds sure know how to enjoy a holiday!

We prefer to waffle about what kind of waffle we're going to make. Mmmm....waffles.

Here's a waffle recipe from Pioneer Woman, a favorite recipe site for the Buds. You can find it here:

2 cups All-purpose Flour 3 teaspoons Baking Powder 1/2 teaspoon Salt 1/4 cup Sugar 1-1/2 cup Milk 2 whole Egg Yolks 1 Tablespoon Vanilla Extract 1 teaspoon (additional) Vanilla Extract 1 stick (1/2 Cup) Salted Butter, Melted 4 whole Egg Whites

Preheat the waffle iron to the regular setting. Sift together the flour, baking powder, salt, and sugar in a bowl. In a separate bowl, whisk together milk, 2 egg yolks, and vanilla. Pour over the dry ingredients and very gently stir until halfway combined. Pour in the melted butter and continue mixing very gently until combined. In a separate bowl (or using a mixer), beat the egg whites with a whisk until stiff. Slowly fold them into the batter, stopping short of mixing them all the way through. Scoop the batter into your waffle iron in batches and cook according to its directions. Remove and serve immediately with softened butter and warm syrup. Serves 8.

Or how about this lovely number for chocolate chip waffles from Tasty Kitchen member Robyn Stone.

4 cups Flour, All Purpose 1 teaspoon Salt 3 tablespoons Sugar 3 teaspoons Baking Soda 1-½ cup Chocolate Chips 4 cups Buttermilk 4 whole Eggs 1 stick Butter, Melted 1 teaspoon Vanilla

Whisk together flour, salt, sugar, and baking soda. Toss in chocolate chips and coat well with flour mixture. Mix together buttermilk, eggs, butter, and vanilla. Pour into dry mixture and stir together just until combined. Pour batter into a waffle iron and cook to your iron’s instructions. Serve immediately with your favorite syrup. Serves 8.
